I agree with Mercy on this, it is really poison. But it is very popular in Cuba nevertheless.
I did write that my eating habits are different from mainstream, and among the things I don't eat is anything with glutamate, and the "sazón completa" is rife with it.
As well, I stay away from vegetable oils with much polyunsaturated fat; they all have far too much Omega6, which is poison as well. The plaque in the arteries at aterosclerosis is mainly Omega6 fat.
The fat that is good for you is monounsaturated, as in olive oil, and also saturated fat as lard and coconut oil. When you avoid polyunsaturated fat, there is no need for antioxidants. Cholesterol also is good so eggs are healthy, and pork is healthy as well. If you skip the carbs (bread, pasta, rice, spud, corn, malanga, ñame and other "edible roots", as well as sugar), fat does no harm, but keeps you in good shape. You cannot become obese on a diet that is low on carbs and high in natural saturated fats. It also keeps blood pressure at bay which is supposed to be healthy.
I read on this board long ago, that someone ate only the whites of the eggs, leaving the yolk, because of the cholesterol. It should be known, that people that die in heart attacks generally have lower cholesterol levels than those that survive. Cholesterol is the building blocks of our cells, and if it is not in the food, our liver produces it. Lowering cholesterol levels with drugs is damaging. The unhealthy LDL particles are those that are very small, and they go unnoticed at the most common blood tests. Large LDL particles do not cause aterosclerosis. Cholesterol is necessary and healthy; if there is too little dietary cholesterol, it is produced in the liver. You cannot adjust cholesterol by avoiding dietary cholesterol. You can observe that people avoiding fat and avoiding cholesterol grow obese and get ailments as aterosclerosis, diabetes type 2, heart disease and stroke.
So the roast piglet is about the best food you can eat, the healthiest, and eggs too. I've been on a diet with very little carb and much fat for a couple of years now, and I have lost 14 kilogrammes and my weight is stable now at 59 kg. My height is 163 cm. And my blood lipids are perfect. Ancel Keys fooled all of you, and the reason why there is an obesity epidemic in Cuba as well as in the USA is that you eat too much carbohydrate. It causes obesity and diabetes type 2. One of the major culprits is soft drinks with high fructose corn syrup. That is really poison.
But it's your health, your body, so eat what you want. I want to be healthy.
I don't eat pork but even this one tested me , specially cooked in between Diesel engines in the backyard in Cuba, LOL
