Mercy, ever cook a coq a vin? I've done it with different types of poultry, but never with a rooster. They're very difficult to find.

I have eaten Coq a vin (chicken in wine). Sounds exotic but it really isn't unless you use a nice wine.

Roosters and Gallinas that are Pintos are very gamy and would not make a good dish. You need the white chickens for that. I forget what they are really called.
