You don't have to go to Cuba to see that! Miami, Tampa, Lakeland, Orlando, Okeecobee and etc.,etc., etc.,............

IMO they are all edible......Mercy, the White Leghorns are raised for Egg Laying and the White Rocks are raised for cooking.
My brother in law had over 80,000 Leghorn Layers in Plant City, FL...He also Incubated, Hatched and raised 40,000 Chicks as replacements......The old exhausted hens were picked up by Campbell Soups Transports and also had Manure Spreader Trucks to sell the droppings.....
Sometimes he would call and see if I wanted over 100 young roosters from the raising barn.....Man, we always had Yellow Rice and Gallo, Gallo Salad, Croquetas de Gallo and etc., etc., etc.,......
I once had one of those, he won.
It was a cockfight. Covered in blood and exhausted from the effort of fighting each other, two lean roosters were pathetically attacking each other to the soundtrack of the hoots and laughter of the crowd. Each bird had steel talons tied to its feet and wobbled about the ring seemingly disorientated and at their wits end. Every so often the owners of the birds would pick each rooster up and kiss it on the backside before throwing it at the opponent rooster again. I tried to take a photo as one rooster fell and was lightly scratched by the other, however I was stopped by a few people in the crowd. These matches are considered illegal in Cuba but judging by the level of delight they took in seeing the roosters slowly kill each other, it seems to be a tradition that is alive and well.
This is very funny but you are right it has great taste with wine I'll try the white chicken you talk about
